Our innovative dining program, Preferred Choice Dining®, features flexible dining times, menu selections, and carryout options. A portion of your monthly fee includes a specific dining allocation that can be spent in any way you please. You decide where, when and how you spend your dining allocation budget.

Chef Aron Spector

Chef Aron Spector brings the passion of a true culinary artist to every plate that leaves his kitchen. A graduate of Le Cordon Bleu and the 2024 LCS Chef of the Year, Chef Aron discovered his love of food through the celebrations of his large family — and that spirit of gathering and connection has shaped his philosophy ever since. Previously Executive Chef at Turtle Creek Club, he leads Sandhill Cove’s culinary program with a simple but powerful philosophy:

Sandhill Cove’s signature casual dining venue, The Cove is the kind of place where you can be comfortable, be yourself, and be well fed — every time. The Sandhill Club

The Sandhill Club Dining Room serves breakfast, lunch, and dinner with sweeping views of the St. Lucie River as your backdrop. Chef Aron’s thoughtfully curated menus celebrate the flavors of the Treasure Coast, and every meal is an experience worthy of the setting. For your most intimate celebrations, the Coral Reef Private Dining Room offers a beautifully appointed private setting with chef-prepared catering — perfect for family milestones, special dinners, and memorable gatherings.

Cocktail Lounge & Outdoor Dining

The cocktail lounge is Sandhill Cove’s social hub. A beautifully appointed space that transitions seamlessly from casual breakfast bites to Happy Hour, it’s always the right place to be.
